Super Oat Waffles
Compliments of my friend Dolores Gonzales

3 cups of old fashioned rolled oats, uncooked
1/4 tsp salt
3 cups cold water
1 1/2 teas. vanilla
3 or 4 dates or 1 Tablespoon Honey
3 Tablespoons soy milk or 3/4 cup raw cashew nuts.

 

Blend all ingredients together in food processor or Vita Mix until almost smooth. Pour onto heated waffle iron, which has been sprayed with olive oil or a vegetable release spray. Bake in waffle iron for 10 to 11 minutes. Batter is liquid, thickens upon standing.

Serve with fresh fruit topping.

My favorite topping is Strawberry. 
Either fresh sliced or topping:

Place 1 quart washed and green removed from fresh strawberries or 16 oz frozen strawberries. 6 ounces of pineapple juice. Put into food processor or Vita Mix and chop till chunky or smooth, your choice!
